SCRAMBLED EGGS

Equipment

  • 1 frying pan

Ingredients
  

3 eggs At room temperature

1 Tbsp butter Use unsalted butter

3 green onions

1 tsp olive oil Used to protect butter from burning

1 pinch salt Approximately a pinch (1/16 tsp)

1 pinch pepper Fresh milled. If white pepper is available use it instead.

2 slices bread

Crack the eggs, place them in a bowl and stir lightly, do not beat. Do not add salt at this time so that the egg retains its consistency.

    Heat an anti-stick skillet over medium heat and add the butter to melt. To prevent the butter from burning and take a dark color we can add a little olive oil.

      Once most of the melted butter is poured, pour the eggs and start stirring them in the pan with a spatula so that they mix well. After about 20 or 30 seconds, while stirring, remove the pan from the heat for a few seconds. This will keep the egg from maintaining its temperature and continue cooking but also do not brown it.

        Repeat this process 2 or three times and add the thinly chopped scallions, salt and pepper. You can also add your favorite fresh cream cheese or striped cheese to your liking. Cook until the egg looks cooked and creamy (about 6 to 8 minutes)

          Prepare some toast and serve the scrambled egg on top of these.
